Ok seriously, this vegan version of Caesar salad should be your go to recipe as it is easy, quick, healthy and delicious. Chopped cucumber and fresh dill added to this recipe will make you a very good tzatziki recipe as well! I originally posted this recipe in April 2013 but it as evolved to contain few more healthy ingredients.
1/4 cup hemps seeds
Juice of 1/2 large lemon
1 large clove garlic
1/4 cup avocado oil or 1/2 avo and 1/2 olive oil
1/8 cup apple cider vinegar (you can do 1/4 cup of avc if you don’t have red wine vinegar)
1/8 cup red wine vinegar (you can do 1/4 cup if you don’t have avc but acv is alkalizing and probiotic)
1 tsp mustard (dijon, yellow or whatever you have on hand)
a pinch of sea or pink salt and a few cracks of pepper
3 tablespoons nutritional yeast (optional as b12 enrichment, plus it adds a little cheesy flavour)
1-2 tablespoons water as needed if dressing is as little thick after you blend it all up.
Process all ingredients in magic bullet or similar type of blender. This recipe will make enough dressing for 3 healthy sized romaine hearts.
NO NONSENSE CROUTONS
1-2 slices non-gmo bread like Silver Hills or if you live in Quesnel, Bread Peddler bread of course!!
coconut oil or avocado oil
pink or sea salt
If you don’t want to turn on your oven, toast the bread well, then butter with coconut oil on both sides and season with pink salt and garlic powder then cube.
If you already have your oven on then cube bread first and toss in a bowl with avocado oil, salt and garlic powder then toast on parchment paper for 4 minutes at 350, toss and toast for another 3-4 minutes until crunchy.
