I’m not much of a baker because being vegan I tend to modify things to much but this cookie is pretty darn tasty and with a nice crispy outside and soft moist inside. I used the almond meal that is left over from making almond milk in this recipe and home made apple sauce. I’m sure store bought would work fine too!
1 cup sprouted spelt flour
1/2 cup almond meal
1/4 tsp sea salt
1/2 tsp baking soda
1/3 cup maple syrup
1/3 cup grape seed oil
1/4 cup apple sauce
Do as you please, I used the following:
1/8 cup shredded coconut
1/8 cup good life chocolate chips
1/8 cup organic dried cranberries
Preheat oven to 350 degrees. In medium bowl combine dry ingredients. In small bowl whisk together wet ingredients until well combined. Add to dry ingredients then fold in your mix ins.
Drop onto parchment lined cookie sheet and bake till golden brown, around 10-12 minutes. Makes 15 cookies.
