Guilty Feeling Veg Casserole

What have you acheived when you feel like you’re indulging in something yet it’s all totally healthy ingredients?  I’m going to coin it as foodvana as in a food Nirvana.  Buddhists/Hindus might not appreciate me playing with their words I think i’ll be forgiven. Anyway, the photos don’t look like much but adding the simplicity to the clean ingredients of this dish totalling to a deliciously satisfying and indulgent feeling culmination makes this a winner winner no chicken dinner for me!

Main Ingredients:

1 head steamed cauliflower cut it pieces
1 medium yellow onion sliced and streamed with the cauliflower
1 cup organic frozen peas
1 cup organic frozen corn
1 cup mushrooms of your choice (i was lucky enough to still have frozen pan fried cubes of puffball from last summer still)

Sauce:
1 cup raw organic cashews
1/8 c nutritional yeast salt and pepper to taste
1/4-1/2 c water

Topping
2 c almond meal or oat flour
1/4 c grapeseed oil

Put all main ingredients into a 9×11 casserole dish.  Put all sauce ingredients into a food processor, nutribullet, or blender type appliance and blend until creamy using as much water to get a thick and smooth sauce consistency.  Mix oil to almond meal in a small bowl (i used the meal that is left over from making almond milk you can also just food process almonds or oats into a corse flour).  Pour sauce over veg and cover sauce with topping.  Bake for 30 minutes at 350 and enjoy with a touch of hot sauce and a nice salad!!
