Avocado Stuffed with Roasted Salsa and Sweet Po

Claiming this to be the best salsa ever:

3 cups tomato cut into large chunks
2 fresh jalapeños whole
3 whole unpeeled cloves garlic
1-2 tablespoons grape seed oil
1 small onion chopped
1/2 cup fresh cilantro chopped
1 juiced lime
1 tsp puréed chipotle pepper in adobo
Salt and pepper to taste


Toss tomatoes, garlic and jalapeños in oil to coat. Spread on parchment lined baking sheet and broil until tomatoes are browned and splitting; about 8 minutes. Add to food processor with juices and pulse till coarsely chopped. Add onions, cilantro, lime juice, chipotle and salt and pepper and pulse till well incorporated but with some chunkiness remaining.

Roasted Sweet Potato:

1 large sweet potato
3 tablespoons maple syrup


Preheat oven to 350. Cube potatoes and place in 2 parchment paper parcels. Drizzle with maple syrup and close up paper. Bake for 35 minutes.

Best dinner ever:

Make a cup of quinoa. Toss with salt pepper nutritional yeast and a bit of coconut oil. Layer potatoes, avocado, salsa and olives and enjoy!
