Baked Pakoras



makes 24, 3-4 is one serving

2 cups channa/chickpea flour

1 tsp sea salt

2 tsp cumin

2 tsp turmeric

2 pinches cayenne powder

2 cups water

2 cups small pieces cauliflower

2 cups thinly sliced onion

1 cup ribboned spinach


preheat oven to 450 f

Combine spices and flour in a large bowl. Add water till pancake like batter is achieved. Add all veg and stir to coat.  Drop onto parchment lined cookie sheets. Bake for 7 minutes then flip and bake for another 7 minutes. Serve with your favorite chutney and other sides to enjoy!
