Apple Pie Mama

Here is a vegan health apple pie!!  This isn’t your mom’s apple pie recipe but Mama is it delish!

I can’t be bothered with making little mini pies so I made one big awesome one and changed some of the ingredients around to use what I had on hand.  I am very pleased with the outcome and the crust set up very well and comes out of the pie pan in one clean  delectable slice.

Crust Ingredients:

  • 2 Cups Rolled Oats
  • 3/4 c each Toasted Walnuts and Cashews (you can toast the nuts after the oven is heated and you are preparing the filling)
  • 1 Tsp Cinnamon
  • 1/2 Tsp Sea Salt
  • 1/4 Cup Agave Nectar
  • 2 Tbsp Coconut Oil
Caramelized Apple Filling:
  • 4 Large Apples
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Cinnamon
  • 3 Tbsp Agave Nectar
  • 1 Tsp Vanilla Extract
  • 1-2 Tbsp Coconut Oil
Caramel Sauce Ingredients:
  • 1 Cup Pre-Soaked Dates (Pitted dates soaked in water for at least 3 hours or bring to a boil and let stand while preparing filling and crust)
  • 3 Tbsp Agave Nectar
  • 2 Tbsp reserved crust
  • 1/4 Tsp Sea Salt
  • 2 Tbsp Coconut Oil
  • 1 1/2 Tsp Vanilla Extract


  1. Pre-heat oven to 350F.
  2. Lightly grease glass pie pan with coconut oil.
  3. Chop and apples into bits.
  4. Place apples in a pre-heated sauce pan over medium heat with your 1-2 tbsp of coconut oil.
  5. Sprinkle apples with remaining caramelized apple filling ingredients.
  6. Mix thoroughly and let caramelize for 7-10 minutes.
  7. Turn heat off and let set.
  8. In your food processor pulse rolled oats until flour consistency.
  9. Pulse in nuts, spices and remaining crust ingredients until a flakey, dough consistency (this will become dough when we press it down).
  10. Evenly distribute and press dough down into pie pan.
  11. Top each with caramelized apples.
  12. Place in the oven for 20 minutes.
  13. Place all caramel sauce ingredients into the small food processor bowl and blend until completely smooth.
  14. Drizzle pie with caramel sauce and serve.

  1. This crust reminds me a lot of a graham cracker crust with its sweet and saltiness but without a bunch of processed ingredients. I would change the agave to honey or maple syrup after doing some reading about the high processing of agave syrup though.
