Simple, tasty and refreshing would be the adjectives I’d use for this one.
Missing in the photo is seasoned seaweed garnishing.
Simply toss together:
1 diced avocado
1 diced mango
7-8 fresh mint leaves chopped
1 small handful fresh cilantro chopped
2 generous handfuls spinach sliced into
2 T tamari soy
1 splash apple cider vinegar
1 tsp sambal olek
Put over cooked short grain rice and sprinkle
with sesame seeds.
