Threw this colorful quinoa salad together for lunch and there was plenty left over for dinner too!
2 cups uncooked quinoa cooked as per instructions
6 leaves romaine lettuce
1/4 c fresh cilantro leaves
1/8 c apple cider vinegar
salt to taste
–Let the quinoa cool while chopping up the rest of the ingredients. Chop the lettuce into thin strips and coarsely chop the cilantro leaves. Cube the mango, tomato and avocado. Add everything to the quinoa, squeeze the lemon over the avocado especially (to prevent oxidation) and toss till its all mixed well.
