Ode to Chocolate Death Cake

My sister used to make a layered dessert out of brownies, chocolate mousse and whipped cream with bits of Score chocolate bar and drizzled with Kahlua. I have taken the dairy, eggs and gluten out of the original recipe to create the Chocolate Life Cake!

The brownie layer is not quite perfected and not the greatest on its own but as a layer of a this rich dessert it works very nicely.

Brownie Ingredients:

2 cups chickpea flour
1 cup cocoa
4 Tablespoons ground chia or flax seeds
1 cup water
1 tsp baking power
3/4 cups agave or preferred sweetener
1/2 cup grapeseed oil

–Put chickpea flour in a large bowl and mix in baking powder. In a separate bowl add 1 cup water to ground chia/flax seeds mix well until a gelatinous egg-like consistency is reached and set aside. In another bowl mix cocoa powder and enough water until a melted chocolate consistency is reached. Stir in liquid sweetener to cocoa powder mixture or if using powdered sweetener add to dry ingredients. Add cocoa, chia/flax eggs and oil to chickpea flour and stir well. Pour into 9×9 greased baking pan and bake for 17 minutes at 350 degrees. Turn off oven and let stand while preparing the vanilla and chocolate layers.

Vanilla Layer Ingredients:

1.5 cup cashews
2 pinches sea salt
2 teaspoons vanilla
1 cup water
2.5 Tablespoons agave nectar
2 teaspoons lucuma or maca powder
1 teaspoon lemon juice
4 tablespoons coconut oil

—Grind the cashews in a food processor to make a nut flour. Add the rest of the ingredients and process until completely smooth. Scrape out of food processor bowl and set aside. You don’t have to wash the food processor bowl out to make the chocolate layer.

Chocolate Layer Ingredients:

1.5 cup almonds
1/2 cup cashews
2/3 + 2/3 cups water
2 pinches sea salt
1/2 teaspoon vanilla
5 tablespoons raw cacao powder
5 tablespoons agave nectar
4 tablespoons coconut oil

—In a food processor, grind the nuts into a flour and add the rest of the ingredients. Process until completely smooth.



I’ve used a spring form pan, a glass dessert bowl and individual servings in mason jars, its up to you.

Crumble the brownie and put use as the bottom layer. Add strong brewed coffee or Kahlua before pouring chocolate layer on. Put in freezer for 5 minutes to harden chocolate layer. I found organic Oreo type cookies and crumbled a few of them in between the chocolate and vanilla layer, not totally necessary but a delicious addition to the dessert. Pour on the vanilla layer and refrigerate overnight. This dessert gets better with age if you can stop yourself from eating it all.
