I’ve been seeing these posts about chickpea fries lately and was intrigued. Here is my first and highly enjoyable attempt at making them after taking pointers from few different recipes I found online.
2 c chickpea flour
2 T chopped fresh parsley
1 t salt
1/4 t cayenne
2 cloves minced garlic
2 1/3 c cold water
–in a large pot combine all ingredients except for water and mix well. Add water slowly and use a whisk to break up any lumps. Once all water is mixed in, turn heat to medium high and stir until a thick batter is formed (3-5 minutes).
Transfer batter to parchment lined 9×12″ pan and press in to form a smooth cake. Chill in freezer for 1 hour or until firm.
Brush with oil and sprinkle fine ground organic cornmeal if you want some extra crunchy bit. Slice into thick wedges and put onto parchment lined baking sheet.
Bake at 450º for 10 minutes. Flip, brush with more oil on top side and bake for another 5 minutes.
Serve with hot sauce!
