Sol Veggie Burger Hash

It seems every country has its own version of what a hash is but all have the commonality of being a dish with a mix of chopped food which often incorporates leftovers.

Seeing as I had leftover rice and beans from Mexican Night I decided to turn them into spicy hash with asian flavors from cinnamon, chili and soy sauce.

Ingredients:

2 Sol Veggie Burger patties diced
1 carrot sliced
2 stalks celery chopped
1/2 medium zucchini chopped
1 small onion diced
2 cloves garlic minced
1/2 sweet pepper chopped
oil for frying
2 T soy sauce
1 T Sambal Olek
1 t cinnamon
1/2 t cumin
salt to taste

–Lightly brown diced veggie patties. Add all veg and saute with all seasonings over medium heat.

Serve over rice, noodles or quinoa.
