Rube Sandwich


Was feeling famished after 3 days of split boarding so though I would make this hearty sandwich for dinner.

Rube Sandwich

makes 2

4 slices bread (Silver Hills is vegan and GMO free)
8 slices maple bacon tempeh (by Turtle Island)
5 T squeezed sauerkraut
Dijon mustard

Ruski dressing

1/2 ripe avocado
2 t Sambal Olek
1 t Sriracha
1 chopped dill pickle

—Smash avocado in a small bowl till slightly chunky then add all Ruski dressing ingredients.

Cheeze sauce

1/4 c nutritional yeast
1/4 c – 2 T flour (I use organic sprouted whole wheat flour)
2 pinches sea salt
1 t chili powder
1/8 t cumin seed
3/4 c water

—Add dry ingredients to small sauce pan over medium heat and mix to combine then add 1/4 cup of water at a time stirring constantly till mixture is smooth.  Remove from heat and let stand while preparing the rest of the sandwich ingredients


—Prepare cheeze sauce first then Ruski dressing.  Lastly pan fry tempeh strips in coconut oil till lightly crisp and set aside.  Lightly butter bread on one side with butter spread of your choice or use coconut oil in the pan.  Layer ingredients starting with mustard followed by Ruski dressing, tempeh, sauerkraut and finally cheeze sauce and lightly grill.
