Raw Yam Noodles and Cashew Sauce

Yam noodles with cashew veggie sauce and green salad with ginger and tamari dressing

Noodles and Sauce

1 large yam
1/2 c raw cashews
2 stalks celery
1/2 sweet pepper (+ additional for garnish)
2 heaping tsp nutritional yeast
1/8 tsp sea salt
filtered water to desired consistancy

—Spiralize noodles with a noodler such as Benriner Cookhelp or a spirooli (find them on Amazon.ca) set aside in a large bowl

Put cashews in food processor with a drizzle of water, process until mostly smooth and add remaining ingredients until creamy and smooth.  Add chopped peppers, fresh ground pepper and walnut cheeze below.

Garnish

1/4 c walnuts
1 pinch of sea salt

—Pulse ingredients in food processor or handy chopper

Salad Dressing 

1/2 tsp grated ginger
3 Tbsp tamari soy sauce
2 Tbsp olive oil

—Put it all in a little jar and shake shake shake and drizzle
